Tonight's Main Dish:
"Butter Baked Chicken"
1 frying chicken-cut up
1/2 cup evaporated milk
1 cup flour
1 1/2 tsp salt
1/8 tsp pepper
1/4 cup butter
1 can cream of chicken soup
3/4 cup milk
1/4 cup water
Dip chicken pieces into evaporated milk; roll in mixture of flour, salt and pepper. Melt the butter in baking dish. Place floured chicken pieces in pan, skin side down. Bake, uncovered, at 400-425 degrees for 30 minutes. Turn chicken over. Combine soup, milk and water and pour around chicken. Bake 30 minutes longer or until tender. Makes 6 servings.
My dear sister is such a chef! I loved this meal. She served it with mashed potatoes-so delicious! This meal makes a perfect gravy to have with those tators. We also had a nice summer salad and corn on the cob...and did you see her adorable Guatemalan apron!?
